Maple Carrots Your Kids Will Eat

    During this time of hurried frenzy, and also a time in which many of us are attempting to save money, my family has worked hard on going back to basics and eating as healthy as possible.  I believe that the healthier your body is, the easier time it will have defending itself or fighting any virus that comes its way. For our family, this means an increase in eating vegetables, whole grains, and basics.

Here’s an easy way to increase an organic, fail-proof vegetable into your meal tonight: Maple Carrots.

You will need:

  • A bag of baby carrots
  • Maple syrup
  • Olive Oil
  • Parchment paper and a pan

First, preheat the oven to 425.  

Second, open up those baby carrots.  Coat them with olive oil and a few tablespoons of maple syrup. Kids can help with the stirring! 

   

 Third, spread them on a parchment-lined baking sheet and bake for 30-40 minutes, turning occasionally. 

The best tasting maple carrots come out a little caramelized and a little brown, and are tender to the poke of a fork.  At my house, we have yet to have leftovers. Enjoy!

    Yum – sounds delish! Thanks for the reminder about healthy eating, I absolutely believe that a healthy body and lifestyle is the key to wellness but sometimes I get stuck in my own little pity party and make unhealthy choices. Time to get back to it!
