Here are three easy dishes you can make in thirty minutes that are packed with produce: cashew-carrot butter, black bean quesadillas, and avocado chocolate pudding.

 

Cashew Carrot Butter:

Ingredients:

2 c cashews

2 c carrots

Maple syrup to taste

Vanilla

 

Directions:

Boil carrots in two inches of water until soft to the polk of a fork (about 10-15 min). Roast cashews in the oven on 400 until shiny (about 5 minutes).  Blend cashews in the food processor until smooth and liquid-like.  Add boiled carrots and process until fluffy and butter like.  To add sweetness, add a bit of vanilla bean and maple syrup for a sweet treat.  Serve on warm toast or as a dip.  Enjoy better eyesight, healthy fats, and vitamin K.

 

Avocado Chocolate Pudding

Ingredients:

Ripe avocados

Maple syrup to taste

Chocolate powder

 

Directions:  Blend avocados in food processor with maple syrup to taste and chocolate powder.  Enjoy.

 

Black Bean Quesadillas

Ingredients:

1 can black beans

1 c salsa of your choice

1 handful cheese of your choice

1 handful corn

2 handfuls greens of your choice

8 tortillas

Olives to taste

A bit of oil

 

Directions: 

 

Blend greens in food processor until tiny (not liquid).  Add beans, salsa, and cheese.  Pulse in food processor until chunky.  Add corn and pulse one more time.  Scoop into tortillas and spray with oil. Fry or bake (400) until brown and crispy.  Serve with greens, olives, salsa.
